Baked Chicken
Ingredients
2 Baked, bone-in chicken breasts

Follow our directions for Baked Chicken (*you won't need the vegetables for this recipe).
Kale Salad
Ingredients
1 bushel kale, chopped
1 package grape/cherry Tomatoes
1 cucumber, sliced
2 carrots, sliced
1 red pepper, diced
1 orange/yellow pepper, diced
1 small bag broccoli slaw
Directions
- Prepare baked chicken according to our post: Baked Chicken
- Set chicken aside and let cool.
- Wash all of the kale salad ingredients.
- Slice/dice according to your liking.
- Mix all kale salad ingredients in a large bowl.
- Once chicken has cooled, cut into small pieces.
- Keep salad and chicken in separate containers during the week.
- When you prepare your lunch for work (either the night before or the morning of), sprinkle some chicken over the salad in a ziploc container. Don't forget salad dressing!
