Ingredients
2 cups cooked quinoa
3/4 cup chopped mushrooms (wild or shitake)
6 basil leaves
1/4 cup chopped onions
3 cloves of garlic, minced
Directions
- Prepare Quinoa (click link for cooking directions)
- Layer basil leaves on top of each other and roll the leaves lengthwise (see pictures).
- Slice roll to create fine, thin strips. The tighter the roll, the easier it is to make your slices thin.
- Over medium flame, sautee onions and garlic in large pan.
- Add mushrooms, season with salt and pepper, and stir.
- Continue to cook for approximately 5 minutes.
- Add basil leaves and quinoa and mix together. Continue to cook until quinoa is heated though.
- Serve as a side dish to your favorite family meal!
